Ship slot 7105 lists a cargo ship named Don Jose - and places her at Manila when the war starts.
This is very likely intended to represent US Army Transport Don Jose, the largest of all the ships
that ran supplies to Bataan. According to US Army Ships and Watercraft, she was 10,183 tons -
vastly larger than the Lake Cargo class to which she is assigned, however. FYI.

There is no comprehensive listing of ships in US Army (and related) service - especially for the
Philippines area early on -when various informal arrangements were made - but a heroic effort is
made by US Army Ships and Watercraft to provide what information there is. In addition to various
kinds of sealift vessels, the Army also operated at least a dozen minor patrol craft - probably akin
to the game's HDML - all of them named - in this same area.

FYI and for what it is worth:
"Racing the Sunrise" (Glen Williford), refers to her being in route from Vancouver having left on 11/04/1941 bound for Hong Kong, and arriving on the 12th. Footnote states that sources vary on the date with "some" sources stating the arrival at Manila on 12/06/1941.

"Overseas-U.S. Army Maritime Operations, 1898 through the Fall of the Philippines" (Gibson & Gibson) states she was diverted from her Hong Kong destination to Manila after receiving news on the Japanese attack and that her cargo was seized by MacArthur. Elsewhere in the book states she sought shelter at Manila after the outbreak of the war. Indicates her flag was U.S.

I'd forgotten until you mentioned she was bound for Hong Kong, once I had that reminder it was just a quick google away.
