Cavalry can be used to screen and protect your artillery when it is moving or setting up. Also,
cavalry can be used, if you have enough units, to
do a Canae on the other fellow by simply swinging
two arms of pure cavalry (followed as quickly as
possible by a few inf units) to go around the rear
of the enemy army. This causes the AI player to
hold back inf, cav, and artillery to try and stop
them (do not engage right away, take a few casualties
to burn up enemy munitions). This allows your infantry
and artillery to press forward aggressivly and lock
the enemy in place. Then the cavalry can press in
to their rear and surround them. I have captured
about 80% of 4 Austrian corps this way.

Like you, I find cavalry exceptionally useful on the detailed battlefield. Unfortunately, I don't find that on the quick battlefield. Only heavies seem to hold their own there.

I agree... quick combat (QC) needs some sort of combined arms rule so that attacking with infantry+cavalry is much more effective than attacking with just infantry or just cavalry. Also artillery need a bit more protection in QC I think...

That's a very good idea for combined arms as well as protection for the artillery which I have seen the AI put into the 'Charge' column very frequently. Something else to consider is having badly depleted units always put into the Defend or even the Rout columns. In a pbem game I once had a depleted Guard unit disbanded after a QC because the AI sacrificed it in the battle I assume. Ouch.
