Home-made chicken pot pie, anybody? A third less cost per serving than Marie Callenders with twice the delliciouness. Cook a chicken, or if you are cheap, like me, get a rotissery chicken from Winn-Dixie. Cut in half and pull the meat off the bones. Finely chop half a Vidalia onion; Finely chop two carrots; Finely chop two big celery stalks; Saute all that in 2-3 tbs butter for about 3 mins. Add 1/4 cup flour and keep going for 1 more minute, stirring constantly; Add 2-3 (less is better) cups chicken broth, saute till bubbling; Add tarragon, parsley, thyme (whatever you want) and salt, pepper, turmeric; Add 1/4 half-and-half and 1/4 cup white wine (if ya do this use 2 cups of chicken broth), let bubble for a sec; Pour into a baking dish; has to be almost half as deep as wide. Too shallow, or too deep, and it will suck; Now, you can make a crust if you want to but I get some pre-fabbed Winn_Dixie deep dish pie crusts, let one come to room temp, and lay it over the baking dish filled with goodness. Do the oven at 375 and cook for 25-30 minutes. Brown, crispy crust and thick, concentrated goodies. Jimmy Buffet's sister has a resaturant and we sometimes trade recipes. One day one of her chefs said 'hey, caint ya do sumfin wif saifood in i?' so I did this whith oysters and clams instead of chicken, used artichoke hearts instead of celery, cut back of the added liquids 'cause of what was coming from the shellfish.
